Plant-based living with Bettina

We absolutely adore Bettina Campolucci Bordi, she’s a plant-based/free-from chef who has a wonderful collection of tattoos. We sat down to have a chat with her about her fave meals, post-tattoo treats and the therapeutic buzz of the tattoo needle…

Bettina, we adore your Insta feed (check it out @bettinas_kitchen). It provides us with such gorgeous food inspo… What made you fall in love with food and decide to follow it as a career? Food has always been a lifelong passion of mine since I was little. Luckily, I stumbled across hosting retreats and found a way to make my dream of cooking as a career a reality. Everything kinda fell into place and the rest is history. I am very lucky that my passion is my actual job!

We love the little peeks of tattoos in your photos, can you tell us about the designs you have on your body?  I have my butterflies that were done by an artist in Malaga – my “believe” was done in Barcelona for my 27th birthday. I have a big arm tattoo by an amazing Icelandic artist based in Barcelona called Jonpall, and my latest big piece of the Goddess Kali on my left hand-side shoulder is by a Balinese artist! I also have some more smaller hidden ones…

Are there any that have special significance? Any food related? All of them have significance and were done during transitional periods of my life. Rather than food related, I would say that they are life related

How do you find the tattoo process? I find it therapeutic and almost like going into a zone. I think anyone who gets them can relate. Some of my tattoos took me years to decide and design, and you get into a special head zone, when it comes to having them finally done. The design process, finding the artist, connecting with your piece and then the execution or the creation process is magical. I feel like I go into a trance during, then when it’s done you kind of come out of it. Once the piece is done I go through a bit of honeymoon period with my piece until it becomes part of you and your journey.

Do you have any special meals you eat before?  I wish I could say yes but I tend to eat less. Lots of water, no alcohol and good sleep beforehand.

Or any that aid in the recovery/healing process?  I love little chocolate treats! There are plenty of recipe ideas in my book [Happy Food], great to batch make before and pull out of the freezer when treats are needed!

What’s your favourite meal? Why? A curry, there is something extremely comforting about a curry. It’s like a warm hug.

What have you got planned for the new year? I am in Costa Rica right now, and will be in Bali soon. I am contemplating getting another tattoo but I am not sure yet! And The 7 Day Vegan Challenge [published by Hardie Grant], my second book, is out now! Exciting.

Give Away & Interview: Stuart Gardiner Design

When did you set up your business? What did you do before? I set up on my own in 2008 leaving behind a job in the music industry designing album covers etc, which after a few years seemed to be a dying business. Going alone seemed like the only option for me, and after that and I had lots of ideas. Sam is a textile designer by trade and she worked at Laura Ashley HQ for 14 years, designing fabrics and wallpapers, but has always had a hand in the business. I used her colour skills from the beginning.

What inspired you to do so? How did it all come about? My degree course was in Graphic Information Design, so this was the info graphic direction was the format my first designs took.

How long have you and Sam been together? How did you meet? Why did you decide to work together? Who is more creative?! We met at school about 25 years ago! We went off to different colleges/universities (me to Falmouth, Sam to Huddersfield). I got my first job in Bristol and Sam in London, so it was a few years before we lived in the same city again. By 2011 the business was growing, we’d had our first child and so after maternity leave Sam joined me in our studio in East London. We made the move out of London two years ago and Sam now works with me three days a week researching and developing new ideas, doing our social media and sales. I wouldn’t dare say who is more creative but it would have been handy if one of us was more business minded – we just have to wing that side of things!

What influences your designs? I grew up heavily into music and skateboarding, and still am, so the rich visual culture of both have had a massive influence on my design work. I’m very drawn to typography and graphic images/illustration in general which I think comes across in my work.

You create a host of tattoo inspired products, do you have tattoos? What draws you to tattoo artwork? We don’t have any ourselves – as a designer I could never commit to having a permanent image etched onto myself – I change my mind too much. I also remember desperately wanting a Celtic band tattooed on my bicep when I was about 18. If I’d had it done, I would never get my arm out now! Saying that, I am very drawn to the graphic styles of tattoos, and I really love the work of tattoo artists like Mike Giant. Someone has had one of our designs tattooed on their leg though (see below)!

What types of things do you sell? Do you design the illustrations? How are pieces created, what is the process? I never intended the business to be so focused on tea towels and oven gloves, that’s just how it’s happened! My first design ‘A Seasonal Guide to British Fruit and Vegetables’ was originally going to be a print to frame and hang on the wall. But I then thought a tea towel would be handier and always in the kitchen.  The design side is just down to me at the moment. We generally pick a food or drink related subject, research the hell out of it, and then begin an appropriate design solution. It can often take a long time as we try to be as thorough as possible, and we often don’t know much about the subject matter.

Do you do commissions? Where can people buy your products? We do occasionally work on commission and have done projects for Liberty London, the V&A, Selfridges, Friends or the Earth and Lurpak. We have just finished a commission for a new shop called Naiise, a print all about gin. Our products are sold all over the country from gift shops to delis and vineyards, but you can buy the whole range from our website and we ship all over the world.

Careers: Tattooed Vegan Baker

We chat to 25-year-old Lizzie, a Vegan Baker from London, about running her own business Heart of Cake, her tattoos and style…

How old were you when you got your first tattoo? I was 19. I’d always loved the idea of tattoos, but I had no idea what I wanted and ended up going for a walk-in somewhere in central London. I got half a tattoo because it was all I could afford at the time and shamefully it’s still half a tattoo to this day.

What is it about tattoos that you like so much, what influenced your decision to get tattooed? I’m a creative person and I appreciate creativity in others. Although I can draw, I don’t draw my own tattoos because I love that every artist has their own style. Just like when I work I need my creative freedom, when an artist is given a brief and they create something you couldn’t even imagine, that’s what makes tattoos and art special. Tattoos are a form of expression and I’ve always been the type to express myself physically.

Can you tell us about your tattoo collection, is there a theme? My tattoos are all very girly and food related. There are lots of reds and pinks involved, I love anything that reminds me of chocolate boxes. There’s also a heart shaped theme running through my leg tattoos (I think there’s about 37 individual hearts on me) which I’m going to continue over my body eventually. I have a slight obsession with hearts! The majority of my tattoos are done by Julia Seizure and I luckily recently got a couple by Jody Dawber which I’m still in absolute awe of.

Do tattoos make you see your body differently? Do they make you feel more confident? Tattoos have been a huge part of my self acceptance. Up until about 19 I was always covered up, I never got my legs or arms out even on the hottest days because I was so incredibly insecure. Getting tattooed gave me the confidence to show some skin because I wanted people to see my super cute tattoos. Being tattooed has definitely helped me become the more body confident person I am today.  If you don’t like a part of you, then why not get cute art on it to help you love and accept it?

How do people react to your tattoos? People usually get really excited when they see my tattoos because they’re pretty different to what they must usually see. I’ve had people literally squatting around me trying to get a closer look and telling their kids to come and look.

How did you start your own business, how did this come about? I started my business a year or so after graduating university with a degree in Film and Television, which unfortunately turned out to not be my passion in life. I’ve always had an interest in baking and since going vegan I’d noticed there wasn’t really a great selection of vegan cakes out there. My business came about mid 2016 and I pretty much winged it from the start, learning to ice layer cakes from YouTube tutorials and supplying local cafes. Now I make tiered wedding cakes and crazy birthday cakes. I sort of fell into it but it’s honestly the most rewarding and best feeling doing something you love for work. Most of the time it doesn’t feel like work, unless I have a 15 hour day and sometimes there are tears, but you get used to it.

What do you love about your job? I love that I have so much creative freedom. I get so excited about making cakes I can’t sleep sometimes and I love that people see my creativity and trust me to make them basically whatever I want. I also love that I can offer vegans or people with allergies great tasting cakes or things like macarons that they can’t usually have or find easily. Seeing customers reactions when they see my work is a very rewarding feeling and that’s what keeps me going.

What is a typical day like for you? A typical day for me is waking up early and writing out my daily schedule. I love writing a list! A cup of tea and I’m off, I’m always doing something baking related or replying to emails and admin. The joys of working for yourself! On my days off I usually go out to eat with my boyfriend, we go to the cinema a lot and sometimes binge watch TV series with our cat, Baby.

Your job is pretty creative does this spill out into other areas of your life, like your fashion style? I’ve always been a very creative person, it runs strongly in my family. I love anything a bit different or that stands out from the norm and I guess I reflect that in the way I present myself. I’ve had pink hair for about eight years now and before then I’d always felt way too normal in my own body. I love wearing huge sparkly earrings or giant pom poms and anything that’s a bit odd, while also supporting these small creative like minded business who make them. I’m just attracted to exaggerated or over the top things and I like to show that in my work and through myself.

Yoga with Nina

We chat to 26-year-old Nina Goks, a yoga teacher and naturopathic nutrition student from London, about her vegan journey, tattoo collection and living a yogi inspired life…

When did your yoga and vegan journey begin? My yoga journey started before veganism! I began yoga over four years ago, I was trying to get healthier, eating a more conventionally healthy diet, running and doing HIIT training. I tried a yoga style workout and quickly began doing yoga more than any other exercise – I enjoyed the peace, strength, release and focus. Before yoga I was relatively mindless when I worked out, I’d just get through it to get it over with and yoga is precisely the opposite.

My awareness of healthier eating initiated thoughts about compassion. I cut out meat and was vegetarian for a few weeks, until I watched Earthlings – I haven’t looked at the world the same since. Compassion, non-harming, living a simple life and being conscious of your health, the wellbeing of the planet and all life are certainly aspects of both yoga and ethical veganism, so it was natural for them to come along hand in hand. Then they spilled out into every aspect of my life and I quit the career I’d been very unhappy in to indulge in yoga and nutrition!

What drove you to make such a huge lifestyle change? I was inspired by several people on social media, I enjoyed following along with their journeys. I was really introduced to veganism on those platforms, it enticed me to do research for myself. I chose to actively pursue it because once you know better, you can do better! It was time to be proactive. I was also having a lot of health issues, some diagnosed, some unexplained and for the most part I’d just accepted them as part of my life. Now that seems wild to me, I didn’t ever associate eating so unhealthily with ill-health – bare in mind I was a total junk food addict prior to the few months before I went vegan.

Has it made you think about your body and yourself differently? Of course! I began to view myself as someone worthy of mindful health, I saw my body as something capable rather than deteriorating. It’s not arrogant or selfish to acknowledge your worth, in fact it’s liberating.

What advice would you give to others wanting to make a change? Educate yourself, watch documentaries, reach out to the online community for support and inspiration. If it’s something you want, then be kind to yourself on the journey. It can have its trials and tribulations but nothing worth doing just falls into your lap, it’s OK to be fearful, to take criticism. If you give yourself the information you need then it’s a much more simple transition. Choosing a positive outlook on something really changes the outcome!

What do you share in your YouTube videos, what can people expect to see? I didn’t have a specific intention in mind when I started my YouTube channel. I just wanted to document my travels and make videos around the relatively new and exciting lifestyle I am continuing to learn about. So you can expect veganism, yoga, travel, yogi/vegan lifestyle, natural health and minimalism and probably a lot of other totally random musings.

How has your style developed? You’ve started to take more of a minimalist direction, what inspired this? With tattoos, I used to be more into traditional, but I’ve definitely developed a love for neo-trad. Minimalism was sparked by aspects of a yogi life. Living simply and the understanding that you have enough and you are enough. My aim is to have what I need, buy from independent, conscious small businesses or second hand but still use what I have now until it needs to be replaced. We are such consumers, totally feeding into what’s sold to us, when you reign that in you start to appreciate what you do have and where it comes from. My style has definitely evolved to much more clean and simple, tropical and nature inspired, vegan and barefoot living!

Can you tell us about your tattoos? Do you think tattoos have to have a meaning? My tattoos are largely collected from female artists, but not all, especially anything I got in the past two years. Something about the experience of getting tattooed can become ritualistic. My husband, Goks, is a tattoo artist and his passion for tattooing expanded my own ideas about tattoos, I’d always wanted them, even though for a short time I said I wouldn’t have any that were visible.

That changed quickly, especially once I saw all the unbelievable artists out there. If you feel a connection with an artist, their work and their vibe, it totally changes your appreciation for the tattoo. Mine are really just things I was/am into, I’m not anal about what I get tattooed and often have my own ideas of what I want. I think there is a happy medium as far as meaning goes. If every single tattoo has to be sacred and super personal it could be hard to actually have ideas or be open to artist interpretation.

When did you start teaching classes? How can people get involved? I’ve been teaching privately for a few months now, since I completed the start of my training. I’m in the midst of organising classes but I am available for private classes in south east London or within local areas. Careers: Tattooed Operations Manager

We chat to Lauren who works as the Operations Manager of Twisted Burger Co in Sheffield about a day in the life managing a developing food franchise and her growing collection of beautiful tattoos… 

How old were you when you got your first tattoo?

I got my first tattoo when I was 18 so it’s not like I’ve got this underage story of a shit tattoo, even though it is a bit. I don’t think I’ll ever get it covered because I like that it’s my first tattoo, I like the back story. It was done in some dodgy tattoo shop in Rotherham and I got it because I wanted to know what a tattoo felt like. It’s just below my ankle and it’s ever so tiny, just a little daisy with some really shitty swirly stuff around it and I think it cost a tenner. I was bit worried that my foot was going to drop off but at the time I thought that it was the shit, like the bees knees, that I was so cool and took loads of pictures to put on the internet like ‘look at my new tattoo’ but I do still love it.

What drew you to tattoos, did anyone influence you?

Richard Lazenby from Crooked Claw Tattoo who is doing my right arm sleeve. His stye is very traditional, thick lines and bright colours that’s the kind of style that I like. There’s also someone I like called Filip Henningsson who works at Red Dragon tattoo in Sweden who I religiously follow – he is incredible. One day I want to go to Sweden just to get tattooed by him, he does really cool flash as well as a lot of necks and hands because obviously he is that good. And then my friend Alexandra Bawn her tattooing is incredible it is so intricate but she’s really versatile and changes. She also just got engaged to Matt Webb who is also a tattooist and I love his style and insanely bright colours. I usually just wear black so I kinda like my bright tattoos.

Can you tell us about some your tattoos?

I have these three party dots on my hands, which I have matching with Anthony Allen from Skull & Bones Boys Club. We actually tattooed each other at 3am when we were absolutely hammered in my kitchen. We decided whilst drunk that we were ready for our party dots. So we bleached down the kitchen, got a sewing needle and some biro ink and put these black dots on each others hands. It was very silly but they’ve sort of grown as our friendship group has now got them too.

Then I’ve got ‘CFTHY’ which stands for Cult For The Haggard Youth which is an album by Dead Harts. I think there are now 14 or 15 people with this now in different places which is incredible. Next to that I have my brotat with Dom from Dead Harts as it was Friday the thirteenth and Niall Shannon was doing £13 flash so we got matching ones.

My baby is this one on my forearm, which is my late grandad. He passed away in February 2014, and I’ve got his nickname Sonny and my late grandma’s name Joan as well. I gave the task to Richard Lazenby and said here’s a picture of him do it in your traditional style. He did this beautiful traditional portrait of him but it’s not realistic but still a likeness of him in Richard’s style. I was originally going to get him on my leg but I changed my mind once I saw the design and I had him on my forearm, so it is definitely my all time favourite. Then I have a butterfly for one sister, a horse shoe for my other sister and some of my sleeve was paid for by family members. I’m building up bits and bobs like that and I’m getting some for my mum and dad further up my arm.

How did you get into your current role?

I actually started working for The Harley (flagship Twisted Burger Co venue) in October 2013 as the assistant manager of The Harley not Twisted Burger Company and within the space of a couple of months I moved up to being general manager, running the building, the club nights, managing all the staff and everything like that. From that my boss, Dave Healy saw something a little bit more in me, saw my ambition, saw my passion for food and my work ethic. I have always worked really hard all my life and he said right I don’t want you to be general manager anymore I want you to be the operations manager of Twisted Burger Company they need someone and I think you are the right person. I’d never been an operations manager before, I had no clue what I was doing and he said not to worry he’d teach me. So as well as the operations manager my role also entails being the area manager, the brand manager and I do all the marketing.

Did you have to get qualifications or did you work your way up?

I’ve been in the hospitality industry since I was 14, waitressing and working my way up. I also did some other management jobs before I was at The Harley but at the same time I went to university and got a degree in media studies and got a couple of NVQ’s in hospitality and catering so I got my qualifications as well. I originally wanted to go into radio but my career in hospitality just took over and I kept getting promoted. I’ve never had a company that has pushed me to be so creative and it’s definitely brought out the best in me.

Dead Twisted Vegan Sauces

What is a typical day like?

I’ll just describe what has been happening in March and that may just show you how crazy my career actually is! We’d planned to release our sauce range with Drop Dead, a new menu and a unit at the Moor Market in Sheffield City Centre. But originally these were all spaced out in our business plan for the year. Various things happened and it all ended up dropping into March. So in the space of like five weeks we launched the unit at the market, we launched a sauce range and we launched a brand new menu across all our franchises. So it has just been a really crazy past few weeks. But obviously everything that we’ve done with the sauces, from designing the labels with Tom J Newell, to coming up with the right recipes to the names on the new menu has just been mad.

It is just myself and Alex Malins who do all the day to day working for Twisted Burger Company, he is the executive chef but he has a lot more involvement than just the cooking- we do a lot together. It’s a very fun job, hard work but very rewarding.

How do you dress for work? Do you show off your tattoos?

We dress however we want, most offices have a dress down Friday but usually I do dress up Fridays but just on my own because I do like to wear smart clothes and dress up a bit! If I’ve got meetings with future franchieses and I’m doing a sales pitch I will always dress up a little bit.

Do you find in hospitality people react more to your tattoos? 

I actually worked for Wetherspoons before I worked here and as soon as I got my first visible tattoo my boss sort of said  ‘you’re covering that up’ and they wouldn’t let me have my nose ring in either. Here there is a lot more freedom and it took me quite a while to get used to it after having to dress so smart all of the time. So coming to Twisted Burger Co and letting myself go was a bit of a weight off of my shoulders in a strange kind of way. But when I was working behind the bar, customer facing you do get a lot of comments or people touching you are grabbing where your tattoos are. But you just kind of get on with it.

Do you have any advice to other people considering their careers when getting tattooed?

In the day we are in now I don’t think it matters as much as it used to but obviously with things like face or hand tattoos you’ve got to be quite discreet unless you know for the rest of your working life that you are going to be in a company that doesn’t mind you having those. But even with that sometimes when I have business meetings with future Twisted Burger franchisees I do cover up just to look a bit more professional rather than risk that judgement.

Even as a tattooed person I have that opinion that to look smarter you should cover your tattoos up – it depends entirely on who you are with and what you are doing. I don’t want to risk a bad decision for this business but then sometimes that is the quirk of Twisted Burger Company in that we can dress and look how we want. A few of us are tattooed and Alex Mallins my colleague has his eyebrow pierced so he is a bit of a goth as well. So if we turn up to a business meeting I bet sometimes people think God what have we let ourselves in for and then we sell our product and they think it’s a great product and a great brand. We’re so proud of TBC so its really easy to say great things about it because we love it as well.

We just want to grow in Yorkshire and keep getting bigger. It’s a lot of work to do but I love working here and I love my job!

After we spoke to Lauren we then had the pleasure of checking out Twisted Burger Co’s new menu.  

From the ‘Return of The Mac’ burger with a pesto and mac and cheese combo to the incredible ‘Bury me in Smoked Sausage’ their new menu did not disappoint. If you’re into your chicken burgers but fancy something a bit different it’s well worth it for the creole mayo and smoked sausage topping.

But it was the ‘Drop Dead Twisted Barbecue Burger’ that really raised the stakes with a double vegan ‘meat’ patty, vegan ‘cheese’ slice and bbq jackfruit in the new Dead Twisted sauce which made this carnivore think twice before she orders another TBC burger.

But if you aren’t in the mood for burgers Twisted’s ‘Jalapeño Business Fries’ hit the mark along side more amazing new sides to the menu. The incredible ‘Highway to Falaf-hell’ with coconut and coriander drip and ‘Hang up the chick habit’ consisting of a basket of confit chicken wings has an unbelievable blue cheese dip and will fill you up as much as any burger!
